Vanilla Butter Cookies plus adaptions

I love to make a big batch of this dough, halve it and then flavour it in two different ways for some variety.

It’s really just a simply vanilla butter cookie recipe made into something a bit yummier



250g Butter at room temperature
2/3 Cup Caster sugar
2 tsp Vanilla essence
1 Cup Plain flour
1.5 Cups Self-Raising flour
Enough milk to make dough come together softly – Approximately 4TBS


Preheat oven to 160C and line some biscuit trays with baking paper.

Beat the butter and sugar together until soft and light. Add the vanilla essence and beat for another minute.

Add the flours and 3 TBS of the milk and mix until soft dough forms. If still a tad dry, add another TBS of milk.

Halve the mixture and add your favourite flavourings.


Add 2 tsp of rosewater and 1 tsp of Almond essence

Make thumbprint cookies by flouring the handle of a wooden spoon and putting an indent in the middle of the cookies then filling the middle with jam

Add some chocolate chips

Add cocoa powder, orange zest and a TBS of orange juice

Add Lemon juice or Orange Juice, Lemon zest or Orange and poppyseeds

Add hundreds and thousands for fairy cookies


If adding extra fluids such as essences or juice you may need to add another TBS or so of flour
