Mix 4 eggs with 1.5 cups sugar until sugar is dissolved and is thick
Add 1/2 cup vegetable oil and mix until blended well.
Add 1 generous teaspoon of vanilla and mix
Add 2 cups plain flour, 4 teaspoons of baking powder and 1/2 tsp salt and mix.
Add the juice and zest of two lemons, two Tablespoons of poppyseeds and mix well until well combined.
Meanwhile, thinly slice a lemon and add to a pot with 1/2 cup sugar and about 1/4 cup water. Simmer until lemons begin to soften. Reserve the water.
In the bottom of your cake tin (oiled and floured) sprinkle some sugar on the bottom then Lay the sliced lemons that were cooked in sugar water, then add some extra sugar. Top with the cake mix and bake cake for about 50 minutes in 180C oven.
Once ready using the sugar water from the sliced lemons, add the juice of a lemon to it with 1/4 cup of additional sugar and simmer until is a bit thickened. Pour slowly over the cake.
Can you SMELL them?! Close your eyes and imagine the smell of fluffy, yeasty soft bread rolls filling the air…. mmmmmmmm

1 Cup warm milk
1 Cup warm water
100ml Canola oil
2 eggs – put one of the egg whites aside
3 TBS yeast
1 1/2 tsp Salt
2 Generous tsp sugar
4-5 Cups plain flour (you’ll know how much as the dough comes together)
For the top
Your 1 Egg white
2 tsp Water
Mix all of the bread dough ingredients together in a stand mixer until dough is soft, adding flour as you need it to make it soft and no longer sticky.
Let rest in an oiled bowl and topped with glad wrap and then a tea towel until doubled in size.
Roll the dough into roll sized balls and place on a baking paper lined tray.
Whisk the topping ingredients (except for the poppyseeds) together and brush on top of dough. Scatter poppyseeds on top of that, Allow to rest another hour.

The success of that delicious pie, the cake with the perfect crumb and breads, oh yes the breads. From flat breads to sweet breads to turkish breads. Breads, cakes and pies are my true comfort foods.

We love this bread, I love the smell of it baking and the eating is just as good! I hope you like it too. My photo’s are generally iPhone 4s…. not much good for nice images but meh you do what you can do hahaha
4 cups plain flour
2 Tbls olive oil
2 tspn dry active yeast
1 cup hand hot water
1/2 cup warm milk
1 tspn salt
1 Tbls caster sugar
Preheat oven to 180C and line a baking tray with paper.
Activate the yeast by mixing it with the sugar into the hot water, sit it in a draught free place for 10 minutes or until foamy.
Mix the ingredients by hand or with a stand mixer and dough hook until a soft dough forms and is smooth and elastic. put into a bowl that’s been oiled with olive oil and cover with a tea towel in a warm spot until risen.
Punch it down and then stuff with your choice of cheese ( Feel free to play with the stuffing adding olives or peppers etc… )
Top with Melted butter that’s been mixed with some crushed garlic, olives, halved baby tomatoes, some oregano or italian herbs and grated cheeses.
