Chicken Tenders

These gorgeous chicken tenders is made by Adele on the cooking group I am in. They look so good and i’m sure the kids will love them when I make them this week!

Ingredients

For the Marinade
1-1.5kg chicken tenderloins
1 cup yoghurt
1.5 teaspoons salt
1/4 teaspoon cayenne pepper
1/4 teaspoon garlic powder
1/4 teaspoon paprika

For the crumbs
2 cups plain flour
1 heaped teaspoon salt
1 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon paprika
1.5 teaspoons baking powder
4 tablespoons milk
1 cup oil for frying

Combine the chicken tenders with all of the marinade ingredients in a large bowl or ziplock bag. Mix until chicken tenders are evenly coated. Refrigerate for however long you have, I left it for 30 mins you can leave it as long as you can.

Make the crumbs by mixing the flour, salt, pepper, garlic powder, paprika and baking powder in a large bowl. Mix until well combined, then add the milk and stir with a fork until mixture is evenly clumpy/crumbly.

Get a plate or tray ready. Put tenders into the crumbs one or a few at a tome (depends how but your bowl is). Be sure to press the chicken firmly into the crumbs so clumps stick to the meat. (It’s best to use one hand to remove the tenders from the bag and the other to toss in the crumbs). Put crumbed tenders on the tray.

Line another tray with a few layers of paper towels and set aside. Add oil to a pan I put about 1 or 2 cm high oil. Heat just above medium heat (5/9). Fry a few at a time until golden brown on both sides, flip only once. Put cooked tenders on paper towels to drain.

Serve hot alongside salad, bread, potato n gravy, whatever you like.

Pearl Couscous Salad

Summer is here and that means beautiful bright salads can be served every day =D it’s the ONLY thing I love about summer hahhaa

I hope you’ll love this beautiful pearl couscous salad I made last night. Super easy and so good!

Ingredients

1 Cup pearl couscous
1.5 Cups chicken stock or 1.5 cups water with some powdered stock inside
1 TBS oil
1/2 of a cucumber, diced small
Small punnet cherry or grape tomatoes, halved
Small block feta cheese (not the soft one) Chopped small
1 Can chickpeas, rinsed
1/2 Red Capsicum, diced small
1/2 Green Capsicum, diced small
Handful of chopped black olives
1/4 Cup red onion, very finely chopped
Small handful of Parsley or Coriander chopped finely if wished
2 Lemons juiced and zest of 1
1 generous tablespoon honey
Olive oil
Salt and pepper to taste

Method

Cook 1 cup pearl couscous in 1.5 cups chicken stock until soft. Leave to cool, stir occasionally to ensure all stock is absorbed equally.

To bowl add chopped cucumber, red and green capsicum, some red onion, chick peas, cherry tomatoes, chopped parsley and any other veggie you like if wished.

Add juice of 2 lemon and some the zest, olive oil, some honey, salt and pepper. Then stir through chopped feta. SO YUM !!

Feel free to add chopped herbs at the end

The kids and I are SO EXCITED that Social Soup chose us amongst many other families to trial and review the EasiYo system to make real, fresh yoghurt in our own home.

I have used EasiYo before, it’s luscious seriously! it’s a pot set yoghurt and is everything as good as what you would buy in the fridge section in stores.

I love the great range of flavours and their website has a great number of interesting recipes to mix it up. No more eating yoghurt from the tub here, I’m gonna get FREAKY πŸ˜›

The very first recipe i’m going to make is Ambrosia – *Sighs* I love that stuff. I’ll be sure to upload photos here when i’ve made it.

Leave it for 8-12Β hours and you’ll have thick yoghurt. #EasyAsEasiYo

I have a new addiction – COCONUT CHIPS !

It’s no secret in our house that I love everything COCONUT! Coconut water, coconut milk, shredded, desiccated omg everything coconut I adore ❀

I was at the pharmacy the other day and I saw coconut chips on the counter, they weren’t cheap (about $4 is memory is correct) but having never tried them before and having the personality where money burns a hole in my pocket and must must be spent I grabbed a bag.

oh how I wish I grabbed more than 1 bag πŸ˜₯ biggest regret lol

I don’t know about other brands, as I said this is the only brand i’ve ever tried. But WOW these things are amazing. The packet did not have enough though as after I finished the last crunchy delicious morsel I was begging for more and getting each tiny crumb from the bottom corners to prolong the snacking delight.

The next time I see these babies i’m stocking up. I’ll have to be sneaky and hide the purchase from my husband though or he’ll likely have a heart attack at the price hehe

Moroccan Brown Lentils

We love this recipe, It’s perfect as a side dish or include it with bread and make it a wholesome lunch. Penny saving recipes should be in every mum’s recipe book πŸ˜‰

Ingredients:

2 generous cups brown or green lentils
1 can diced tomatoes or 4 large tomatoes grated with skins discarded
4 TBS tomato paste
4 cloves garlic, crushed
2 Large onions, small diced
1 TBS Cumin
1 TBS Paprika
2 tsp Ginger powder
salt and pepper as desired
1/3 cup olive oil
small handful chopped parsley
1500ml water

Method:

Mix all in a pot and cook until lentils are soft and the sauce is thickened as you like it. So EASY

This is delicious served along side fish or just with bread yum !
